The folks at Krusteaz are spoiling me again, this time with several great cookie mixes, just in time for back-to-school snacks or lunchbox treats. I was thrilled to open my latest box of goodies from Krusteaz. In addition to receiving two boxes each of six different cookie mixes (Meyer lemon, triple chocolate chunk, double peanut butter, brown sugar oatmeal, butter vanilla sugar and oatmeal scotchie), also included in the package were Curious Chef® cookie cutters and measuring spoons, a lunch bag, an oven mitt, two aprons, some recipes and a selfie stick. Sweet!
So far I’ve made the Meyer Lemon cookies, which were great – light but not too tart. Gabe was surprised at how much he liked these, especially since he usually goes for cookies with chocolate of some form.
Gabe also loves cookie cakes, so I decided to make one using the two boxes of the Triple Chocolate Chunk mix, following the directions on the box. Simply spread the cookie batter on a round pizza stone and cook according to the time on the box, until a toothpick inserted in the middle comes out clean.
After eating a few slices, we decided to test the new cookie cutters and make some cute stars, hearts and butterflies, which we decorated with cookie icing. So easy, and the kids love the fun shapes (and the icing, of course!)
On to the Brown Sugar Oatmeal cookies. All I did with these was to follow the directions on the package, except I added a package of reduced-sugar Craisins to the mix. If you like your oatmeal cookies soft and chewy, let them sit on the cookie pan for several minutes before moving to a cooling rack. Want them nice and crispy instead? Bake for a couple more minutes, then immediately transfer to a cooling rack. Whichever way, chewy or crisp, these will be on my baking list for the upcoming holidays for sure — so simple to make!
One of the recipes that came with my package was for Peanut Butter chocolate sandwiches, which sounded awesome and easy to make. They were, and here’s the recipe because I know you will want to make these, too. I took them to the pool for my swim kids and lifeguards (and a couple of parents) and was repeatedly asked how to make them. They did not last long!
Peanut Butter Chocolate Sandwiches
Ingredients (makes approximately 28 sandwiches)
- 1 package Krusteaz Double Peanut Butter cookie mix
- 1 stick butter, softened
- 1 large egg
- 1 cup of semisweet chocolate chips (the original recipe called for ½ cup, but I doubled it for more chocolatey goodness.)
Preparation
Preheat oven to 350 degrees F. In a medium bowl, mix together cookie mix, butter and egg until well blended. Scoop dough by rounded teaspoon and place on an ungreased cookie sheet (love my Pampered Chef large bar pan for this (and all of the cookies) because the bottom of the cookies cook evenly and don’t get too brown.)
Bake for 8-9 minutes. Remove from oven and flatten each cookie with a spatula. Return to oven and bake for another 2-3 minutes, until the cookies are golden brown.
Transfer half of the cookies to a plate, flat side up. Place several chocolate chips on each cookie, top with another hot cookie, slightly pressing them to help the chocolate to melt.
Cool on a wire rack until the chocolate sets and then enjoy with a glass of milk or champagne.
I still need to make the butter vanilla sugar and oatmeal scotchie cookies and am looking forward to both. Talk about cookie heaven! We have tried a few of their cookie mixes. My favorite is the molten deep dish cookie, which you don’t have listed. We buy the Krusteaz cornbread mix almost exclusively.
