Kel’s Easy Cheesy Cheddar-Garlic Drop Biscuits

These cheddar-garlic drop biscuits are so easy to make – just a handful of ingredients, minimal prep time, about 10 minutes in the oven, and Viola! you have warm, delicious homemade biscuits that go great as a side to a variety of soups, stews, chilis, and other main dishes.

I prefer smaller biscuits and usually make a dozen at a time. If you want larger biscuits, just divide the dough into larger spoonfuls. I also like to cook these on a baking stone, which keeps the bottoms of the biscuits from turning too brown.

Ingredients (makes 9-12 biscuits)

  • 2 cups Bisquick®
  • 2/3 cup milk
  • ¾ cup sharp cheddar cheese, grated
  • 2 tablespoons fresh chives, cut small
  • Crushed red pepper flakes to taste
  • 2 tablespoons butter
  • ¼ teaspoon garlic powder

Preparation

Preheat oven to 450F. Mix together Bisquick®, cheese, chives and red pepper flakes. Stir in milk.

Mix until a soft dough forms. Shape the dough into a ball.

Divide the dough into 12 equal spoonfuls (or less if you want bigger biscuits) and place on an ungreased cookie sheet or baking stone, leaving at least an inch between the biscuits.

Bake approximately 10 minutes, until the biscuits are golden brown.

Melt the butter and stir in the garlic powder.

Brush this mixture over the top of the biscuits.

Serve with your favorite soups or chilis, such as Kel’s Manhattan Clam Chowder.
