Crispy Canadian Bacon and Two-Cheese Hash Brown Waffles

Here’s a great recipe I threw together shortly after I bought my Belgian waffle maker. It combines some of my favorite breakfast foods (Canadian bacon, eggs, cheese and hash brown potatoes) that can be served any time of the day. These are so easy to make and are simply delicious!

If you don’t have a waffle iron, no worries. Just use the batter to make hash brown pancakes instead, as mentioned at the end of the recipe.

Ingredients

Hash brown waffle ingredients

  • 26 ounces frozen shredded hash brown potatoes, thawed
  • 6 ounces Canadian bacon, diced
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup Gruyére cheese, shredded
  • Garlic salt, to taste
  • Hot sauce, to taste
  • 3 large eggs, beaten
  • ¼ cup green onions, thinly sliced
  • Vegetable oil

Preparation

Drain potatoes in a colander. Using paper towels, press on top of the potatoes to release as much liquid as possible.

Place all ingredients (except vegetable oil) in a large bowl and mix well.

Brush waffle iron with vegetable oil and heat according to manufacturer’s instructions.

Evenly spread a cup or so of the potato mixture on the waffle iron and cook until nice and brown on both sides. Repeat with the rest of the hash brown mixture.

If you don’t have a waffle iron, make hash brown pancakes instead. Just heat a small amount of oil in a skillet, add desired amount of potato mixture, and brown on each side until nice and crispy.

Serve with fresh fruit, eggs, juice, etc.
