Go Ape Over This Banana Date Nut Bread

Every now and then I wind up with overly ripe, brown bananas, which I really don’t care for. Instead of throwing them away, I like to make banana-pineapple muffins (see my earlier post at: https://kelleychisholm.com/2012/01/19/banana-pineapple-muffins/) or else a more traditional banana bread. I make mine with nuts, but you can certainly leave them out if you have allergies or just don’t like them. For this loaf I included dates and switched the butter I normally use with some chunky applesauce. The result? A lower-fat and wonderfully moist bread that kids and adults will devour.

Pull-Apart Chicken Thigh and Olive Stew (or Pasta Sauce)

I rarely buy chicken thighs since my family prefers chicken breasts, but there was a great sale on them so I decided to pick some up to cook in my new Ninja cooker. I recalled a wonderful crockpot recipe from my late and wonderful grandmother, Mamma, that combined chicken, olives and canned tomatoes, but that was from my college days and I had no idea where it was. So I improvised and made what turned out to be a delicious dish to be eaten either by itself as a hearty stew, or as a thick sauce served over some sort of pasta. The olives and tomatoes blend wonderfully together and by making this in the slow cooker, all of the flavors have a chance to intensify.

If you don’t have a Ninja, that’s okay – you can use a skillet for the first few steps. Once you brown the chicken and add the seasonings, wine and tomatoes, just transfer it all to the slow cooker and proceed. The Ninja does make the process easier and faster, though.

Drink of the Month, December 2012: Belvedere Bleus*

The first time I had a Belvedere Bleu was at Margaux’s Restaurant in Raleigh, and I’m going to give the folks there credit for coming up with the name for this great martini. All that’s in it is Belvedere vodka, a minute amount of vermouth and bleu cheese stuffed olives.

Wheat germ, I pondered. What could I make with wheat germ in addition to adding it to smoothie, sprinkling it on yogurt or putting it in cereal? Tangy Pork Loin End Roast, Ninja Style

With the holidays so close, time is at a premium for most of us, with the parties and decorating and shopping and such. Here’s an easy and delicious pork roast to make in your slow cooker. I save even more time by making this in my Ninja 3-in-1 Cooking System, especially since I don’t have to use a separate skillet to saute the onions and brown the meat. Don’t have a Ninja yet? Then add it to your Christmas gift list – you’ll be thrilled if one shows up under your tree!

This pork roast is tender, moist and flavorful. The vinegar makes it tangy and the hot sauce gives it a nice kick!

Dale’s Most Delicious Chocolate Brownies

* Note – My dear friend Dale recently passed away after a short illness. I miss him so much, and promise his brownies will always live on!

When I saw that National Chocolate Brownie Day was December 8, I knew right away that brownies would be Kel’s Food of the Month.* It didn’t take me long to decide which recipe to use. My friend Dale makes the best brownies I’ve ever, ever had, hands down. Dale and I worked together at Duke’s main library for several years and those of us in the Tech Services Department (OK, the entire library) liked to celebrate just about anything – birthdays, work successes, end of the semester, holidays, etc. A few of things about the library world:

  1. There’s usually not much money, if any, to spend on staff parties, celebrations, etc., which seem to occur at least monthly if not more.
  2. The majority of librarians I know are good cooks.
  3. Most librarians are more than happy to bring something homemade and delicious to these celebrations.

Luckily for those of us who worked at Perkins Library, Dale’s signature dish was his homemade brownies. Words really can’t do these heavenly things justice – they are truly a chocolate lover’s delight. They were always the first thing to disappear whenever he brought them to a party. Dale and I moved on to different careers more than a decade ago, but I still dream about his brownies. Here’s his recipe – the only change I’ve made is to add pecans.

Rockin’ Oyster “Rockefeller” Stew

My ex mother-in-law is a wonderful country cook. Her fried chicken is the best I’ve ever had, period. Geraldine also makes what she calls Oyster Stew. I never understood why she deemed this stuff “stew” — it was more of a soup to me, with milk, fresh oysters in their liquor, butter (lots and lots of it, Paula Deen would be so proud) and salt and pepper. That’s it. So simple to make, so wonderful to eat (especially paired with her fried chicken!)

I made Geraldine’s “stew” for years after my ex and I parted ways, until I found Emeril Lagasse’s recipe for Oyster Rockefeller Soup Garnished with Crispy Bacon and Fried Oysters. Wow! This is a “kicked-up” version of Geraldine’s stew that I absolutely adore, with heavy cream, bacon, spinach and fried oysters. Not as easy to make as hers, but oh, so worth the effort. Of course adding bacon makes everything better!

Kel’s Cranberry Sauce, Homemade of Course

If the jelly cranberry sauce that comes in a can (the one you slice) gives you the heebie-jeebies (yaay, I finally used that word in a post!) like it does me, you definitely want to try my homemade version, which is savory, sweet and so easy to make. November 23 is Eat a Cranberry Day, but I wanted to share this recipe before Thanksgiving. Now you have no excuse to suffer through the canned stuff. Plus, fresh cranberries are on sale everywhere.

This recipe is based loosely on a cranberry chutney I recently helped make in a cooking class I took at Revolution in Durham (I’ll be posting about that fun and wonderful  adventure soon.) Executive Chef Jim Anile didn’t have recipes for anything we made that day, so I’m just taking some of his ingredients and adding some of my own. The result? Awesome!

Uncle Bob’s Divine Chicken Divan In My New and Shiny Red Casserole Dish

For months I’ve been trying to spend $35.00 I had on a gift card to Williams and Sonoma, which is less than two miles from my house. After numerous visits to the store, I finally found the perfect purchase — a beautiful, red Le Creuset covered casserole dish. It was on sale for $49.00 and I snapped up the last one in the store! With tax, I spent $18.00 plus some change – not bad for Le Creuset, especially at Williams and Sonoma where this dish normally retailed for $100.00!

Now I had to decide on the first dish to cook in my new shiny casserole. It had to be something special (we are talking Le Creuset here) and suddenly it hit me – I’d make my Uncle Bob’s wonderful Chicken Divan, which is like heaven on a plate. Excellent choice, especially considering that the chicken breasts, broccoli and cheese I needed were all on sale. It was like Uncle Bob was giving me a nod of approval from up above.
